On the heights of Col de la Done, La Nouvelle Donne winery was born in 2007, driven by the passion of winemaker Wilfried Valat. After training at Méo-Camuzet, a Burgundy benchmark, he settled in Calce to craft vibrant cuvées, taking full advantage of this unique terroir, both fresh and sun-drenched. Rescued from abandonment, the estate now spans about 5 hectares across 4 parcels. These vines, perched on slopes between the Têt and Agly valleys, benefit from an exceptional terroir, though water stress has become an increasingly pressing challenge in recent years.The amphitheater of schist, with its orange, brown, and beige hues, is perfect for producing fresh wines, thanks to its steep inclines and varied slopes. To top it all off, Wilfried has been practicing organic viticulture for over 10 years, a testament to his commitment to sustainability and natural winemaking. The estate cultivates an impressive range of grape varieties: Carignan, Grenache (red, gray, and white), Mourvèdre, and, of course, Macabeu. After manual harvesting, vinifications are carried out naturally, relying solely on indigenous yeasts. La Nouvelle Donne wines have completely won us over with their vibrancy and precision.
