Malik Oudni, a winemaker based in Colmar on 1.5 hectares, works the vineyard using horses traction, in harmony with nature. For grass management, he is accompanied by his sheep, while Atalante and Vizir, his faithful horses, handle the soil work and harvesting during the grape harvest. Every task in the vineyard is done with music, passion, and guided by a philosophy that deeply respects nature and its ecosystem. The harvest is a festive and musical moment, and the grapes are gently and patiently pressed with a ratchet press. In the cellar, it’s all about grapes—nothing but grapes—allowing the magic of natural fermentation to take place and produce living, authentic wines.
