In 1988, Yvon Métras carried out his first vinifications on the family estate, which has been passed down through several generations of winemakers. He soon left the cooperative cellar to embrace the philosophy of Jules Chauvet and Marcel Lapierre, becoming one of the pioneers of 100% natural wine. Based in the picturesque commune of Vauxrenard, near Fleurie, his 5-hectare estate is entirely planted with Gamay, including century-old vines, some dating back to 1898. Faithful to chemical-free viticulture, Yvon employs traditional plowing and severe pruning to ensure very low yields. The hand-harvested grapes undergo traditional semi-carbonic maceration, relying solely on indigenous yeasts. All his wines are crafted without added sulfur and pressed gently using an antique press that respects the fruit and its juice. The rest of the process remains a mystery, as Yvon is a man of few words, but his expertise shines through in every bottle.His iconic cuvées include "Grille-Midi," "La Madone," and "Ultime," the latter made from his oldest vines, which have played a key role in building his reputation.
