"Les Monts" estate offers two wines from unique plots located in Fussey, in the Hautes-Côtes de Beaune, just a 3-minute drive from Pernand-Vergelesses. Fussey, the last village in the Hautes-Côtes de Beaune appellation, marks the boundary between the Côte de Nuits and the Côte de Beaune. The 5.5-hectare monopole plot, which was used as pasture for over a century, is situated at an altitude ranging from 415 to 470 meters, making it ideal for Chardonnay and Pinot Noir. The white wine comes from a plot with a subsoil made up of marl, limestone, and dolomite from the Jurassic-Kimmeridgian era, covered by a fine clay layer. Organic management of the vineyard and agronomic practices favor biodiversity. The vines, pruned in the traditional Guyot simple method, grow freely without trimming. The 2023 harvest was handpicked on September 9th. For winemaking, the grapes were directly pressed using a pneumatic press, followed by aging in oak barrels for 10 months, during which both alcoholic and malolactic fermentations took place. The Pinot Noir comes from the same terroir and is also hand-harvested. For the 2023 vintage, the grapes were destemmed to avoid vegetal notes and underwent a 20-day infusion in concrete tanks with light pumping over for gentle extraction. After a light pressing, the free-run juice and press juice were blended and aged for 10 months in 228-liter oak barrels (4 years old). A small amount of sulfur is added after malolactic fermentation. For both wines, the final aging is carried out without pumps, filtration, or fining, preserving the authenticity of the terroir.
