A geographer by training and a sommelier by passion, Guillaume Myette has accumulated experiences and knowledge on both sides of the Atlantic in his quest for taste and its understanding. His search for gustatory "emotion" leads him to believe it results from a delicate balance between a place (terroir), a moment (vintage), and human expertise. Wine thus preserves this memory. After technical training applied in the finest terroirs of the Côte de Beaune, in 2023 he was given the opportunity to seek his own balance in the Côteaux du Giennois! In the vineyard: An agriculture without synthetic chemicals to preserve a soil rich in biodiversity and life, along with gentle pruning that respects the sap flow to sustain the vine. Thoughtful, vintage-appropriate interventions are made to obtain grapes of optimal quality. In the cellar: Guiding the vinifications while minimizing interventions, always adapting and using no additives. Sulfites are used sparingly to ensure an authentic, marketable wine. Beautiful cuvées, where a bit of decanting is recommended for the whites before serving !
