Les Céphéides - Manon Ramone & Léa Vigroux
Les Céphéides is a 2.5-hectare wine estate located in the Minervois region, founded in 2022 by two young winemakers, Manon Ramone and Léa Vigroux. Their goal is to produce organic and natural wines using gentle winemaking methods. The grape varieties grown include Cinsault, Grenache, Syrah, Grenache Gris, Rolle, Roussanne, Muscat Petit Grain, and Grenache Blanc. The vineyards are managed according to organic farming principles, with minimal mechanization, favoring hand harvesting to maintain a human-scale approach. In addition to winemaking, Manon and Léa also practice beekeeping, with around 25 beehives. The first vintage, in 2022, was made from grapes purchased from local winegrowers with whom they work as agricultural laborers, a practice they continued in 2023. The year 2024 will mark the first vintage produced exclusively from the estate’s own vineyards. The winemaking process is entirely natural, with no added sulfur, except for a very small dose during the pressing of the orange wine. The wines stand out for their purity of aroma, precision, and juicy or structured character depending on the cuvée, reflecting the estate’s philosophy of authenticity and respect for life. A must-try!
