Simon, born in 1983 in Caen, considers himself a city dweller who has "migrated" to the countryside. After a career as a nurse, he decided in 2018 to pursue organic viticulture, a path that required him to reassess his knowledge, aided by local winemakers who later helped him establish his own vineyard. Before that, he had a varied professional background: sailing instructor, technician, paramedic, and volunteer director at the Red Cross. His winemaking project was born with the help of his father and a friend, both wine enthusiasts. They experimented with winemaking in Paziols, where Simon finally settled in 2018, meeting winemakers who shared their support and expertise. It was in 2018 that he released his first vintage, marking the birth of "Ex Materia," which means "From the existing." Inspired by a quote from the famous thinker Lavoisier, he embraces the idea that "nothing is lost, everything is transformed," also guided by the influence of those around him.The wines are mostly made from red grapes, which also allow for the creation of beautiful "blanc de noirs" wines, bursting with fruitiness and refreshing vivacity! The reds are just as remarkable: Carignan, Syrah, Mourvèdre, mostly produced using infusion techniques to offer red wines that represent their southern terroirs, yet are always digestible and relatively fruity.
