In 2016, Aurélie Besnard and Paul Chereau made the leap from mathematics to viticulture. Their project developed gradually, evolving from three tanks in a garage to a small farm where chickens, a dog, cats, sheep, and children roam freely. Their vineyards are scattered across different locations, from Castelnau-de-Montmiral, where their farm is based, to Lisle-sur-Tarn, the farthest plots. In total, they cultivate 6 hectares using biodynamic farming methods, promoting the biodiversity that is essential for a balanced ecosystem.Their wines are diverse and primarily crafted from traditional Gaillac grape varieties: Mauzac, Loin de l'Œil, Verdanel, and Ondenc for the whites, and Braucol, Prunelart, and Duras for the reds. In the cellar, they focus on maintaining the natural vitality of the wine, fermenting with indigenous yeasts. They avoid any technical interventions that could harm the microbial life, and no additives are used, except for very small amounts of sulfites when absolutely necessary.They offer a range of wines, many of which are single-varietal cuvées.
