We discovered Mélanie and Vincent Zuber's wines in 2023 at a wine fair. Mélanie and Vincent are both trained oenologists, with serious experience that has taken them to numerous estates and "great houses." For your information, Mélanie has been working in a major house in Burgundy for over 10 years, giving her significant experience in winemaking and monitoring aging processes. Vincent, on the other hand, works for a bottler based in Côte d'Or. He primarily handles the "bottling" part and oversees a large number of winemakers working in "natural" wine: this experience provides him with a broad perspective on this essential stage for the good life and evolution of wines.It was with the 2022 vintage that Mélanie and Vincent decided to start this adventure called Grain du Vin, combining their strong experiences and their desire to produce living wines, without any added inputs and with relatively long aging periods of up to 18 months.The white wine comes from vines in the South of the Côte Chalonnaise, at the gateway to the Mâconnais, with the vines being cultivated biodynamically on clay-limestone soils predominantly limestone. The aging is done in 500-liter barrels of 4 to 5 wines, on lees for 18 months.For the red Burgundy, the grapes were harvested in the commune of Ladoix, from vines over 80 years old facing southeast, on reddish-brown soils with flint limestone residues, giving fruitiness and tenderness to this wine. The wine was vinified with whole clusters, without sulfur. After a few days of carbonic maceration, the grapes were very lightly pressed. The aging was done in 228 L barrels aged 3-4 years for 18 months without any intervention or addition.The 2023 vintage also holds surprises that we will reveal to you in a few months...
